"Pale gold in color, the mousse is fine beaded and consistent. There are lovely aromas of yeasty bread dough and apples with a floral component and hints of seaborne brininess, kelp and ocean breezes. A mouthful of pear, guava, lemon rind, and pommelo is supported by a framework of minerality. The bubbly finishes long and lingering with a dose of apricot. A wine for caviar, crab, oysters, Porcini Carpaccio and sashimi."
