This fruit is harvested early, about 18 brix. Low sugars make a drier crisper style of wine. The 1999 was left on tirage for 4 years. The 1999 is yet another excellent example of the consistent quality sparklings produced by Robert Hunter. Straw-colored with a nose of toasted yeast and stone, the palate is a blend of Macintosh red apple, apricot, yellow peach and a hint of cardamom. Twenty-five percent of this blend is barrel fermented, which gives this wine its complexity and round texture. Rose d'Orfeuilles Sparkling Rose 750ml $17.99 Bernard Hérivault and his son Arnaud have crafted this elegant sparkling rosé from 100% Malbec (Côt). The skins of the Malbec grapes are so dark that the rosé color is easily extracted and the juice is pressed off immediately before fermentation begins. This artisinal product is completely hand-crafted using the méthode champenoise (traditional champagne production method that promotes a second fermentation in the bottle). The first aromas are fresh with dark fruit and notes of fresh baked brioche. The refreshing crisp flavors of blueberries and fraise des bois (wild strawberries) just dazzle the palate. With just a hint of sweetness, Rose d'Orfeuilles finishes dry, offering serious complexity to the most discriminating consummers.
