"The 2004 vintage of the Ooh sparkling brut syrah is much bigger vintage than the 2003. Heavier tannins with black fruit create a food wine best paired with stilton, roquefort and other blue cheeses with a lower salt content. Very limited production. Try pairing with this recipe: your favorite blue cheese over halved figs wrapped in prosciuto, seared face side down until prosciuto is carmelized. Also works paired with japanese persimmon, similarly prepared."

"The wine is opaque purple in color. The nose has an enormous amount going on, Blackberry, Blueberry and Plum vie for attention with floral notes and a clean minerality. There is also the classic ham hock, grilled meat and spice character that only Syrah seems to provide. The mouth is full yet restrained, and is very complex with all of the above characters yet has a back bone of that spiciness and ground pepper. Seductive and opulent drank on its own this wine will be a generous math for full flavored meats from the grill and hard cheeses."
